Ingredients:
150g dark chocolate
200g butter
1/3 cup cocoa powder
1/4 cup water
5 tbsp. strong coffee
2 tsp. vanilla extract
300 g sugar
3 free range eggs
125g flour
Icing:
250 g dark chocolate finely chopped
125 ml water
30g dark brown sugar
155g butter cubed
Preparation
Preheat oven to 180°C
Grease and line a deep 22cm round cake pan. In a small saucepan, melt the butter, coffee and chocolate over low heat, stirring until the chocolate is well melted.
Add the sugar and mix until the sugar has dissolved. Then pour the mixture into a bowl.Add the cocoa and the flour over the top and whisk them into the liquid.
Wisk in the eggs one at a time and then whisk in the vanilla. Once everything is combined, pour the mixture into prepared cake pan and bake in preheated oven for 55 minutes or until a knife inserted in the middle comes out clean.
Let the cake to cool completely in the pan
Heat a pan over low heat and melt the sugar, the water and the butter. When the mixture begins to bubble remove from the heat and stir in the chocolate.
Once the mixture is well combined whisk it until smooth. Repeat this every 20 minutes during 1 to 2 hours until the icing is thick.
After the cake has totally cooled spread the icing on top.
